Wines of Domaine Saladin

Elisabeth and Marie-Laurence create a range of ‘terroir’ wines, reflecting the diversity of the soils in Saint-Marcel d'Ardèche, the 13 Mediterranean varietals of the Domain and their own inspiration

Paul

The grapes for this wine come from the ancestral vineyard, the oldest vines from our Uncle Paul, (Louis’ eldest brother) – a real treasure! The 2006 vintage was the first one that he suggested we try our hand at, a vote of confidence to his nieces.

VARIETALS : 90% Grenache Noir, 10 % Clairette, co-planted in this old vineyard.

TERROIR : Full southern exposure, typical argillaceous limestone soil from Ardèche, this plot is bordered by cypress and almond trees and is graced by 50 year old vines. Yield is 35 hectolitres per hectare.

HARVEST : Grapes are handpicked.

VINIFICATION :  Grenache and Clairette are blended in small vats with semicarbonic maceration. The result is an expressive natural wine (only a small touch of sulphite) without the addition of yeasts, enzymes, tannins or any such additive.

AGING : The wine is aged in tanks for 9 months.

CULTURE : As for all our other cuvées: no pesticide, no herbicide, no insecticide – our estate has always been chemical free. Vinified using only indigenous yeasts, as has always been the case at the domain. “Agriculture Biologique” (organic) certified by “Ecocert.”
